The autumn is absolutely my favorite time of year and one reason is that it is perfect weather for making soup…here is one my of favorite recipes…

Portuguese Bean Soup (a very large recipe, easy to halve. It’s also easy to adapt the ratio of vegetables to your own preference.)
12 cups chicken stock
2 medium potatoes, peeled and diced
2 medium carrots, peeled and diced
2 cups chopped celery
1 medium chopped onion
14 oz tomato sauce
2 cups sausage (your choice) cooked and chopped
1 tsp salt
1/4 tsp pepper
14 oz can kidney beans (rinsed and drained)
1 cup uncooked pasta (optional)
4 cups shredded cabbage
In a large stock pot put first nine ingredients and bring to a gentle boil. Simmer until vegetables are tender. Stir occasionally.
Add kidney beans, pasta and cabbage. Return to boil and lower to a simmer for 10 minutes. Serve and enjoy with your favorite bread. Guaranteed to ward off the chilly weather!
